It's Sunday morning of Week Four.
Today should be a HAPPY SUNDAY for my husband. We are eating one of his absolute favorite breakfasts and dinners.
For breakfast I am making Maryland Cream Waffles. They are similar to Belgian Waffles, and I cook them in a Belgian Waffle Maker. They are crisp on the outside, soft on the inside and tangy and non-sweet which pairs perfectly with melted butter and sweet warmed syrup. Bacon will add a crisp salty side to make the meal just perfect.
German meatballs, are a sort of sauerbraten variety of meatball. If you've never tried sauerbraten meatballs, it's quite different than any other kind you have tried. They are both sour, spiced and sweet. I first made them when my oldest was in preschool and we were learning about different countries. We would cook recipes from different countries each week, and I came across this recipe for German meatballs when he was learning about Germany. They were an instant hit at our house. Steve and all the kids LOVE them. They are great over egg noodles.
For dessert, I am making Rainbow Dessert Cake - this is also sometimes called Jello Poke Cake because you bake a regular cake and "poke" holes in it to pour any flavor of jello into. Then top it with whipped cream. It's not only delicious - it's a pretty dessert as well!

BREAKFAST:
1. Separate egg whites and egg yolks. Beat egg whites in mixer until they are stiff with dry peaks.
2. Mix flour, baking powder, salt and sugar together in a medium sized bowl.
3. Mix well.
4. Melt butter.
5. Add milk, egg yolks and melted butter to flour mixture.
6. Mix well. Fold into beaten egg whites.
7. Cook in waffle maker. I use about 1/3 cup of batter in my waffle makers. I use 2 waffle makers at a time to cook them faster in the morning.
8. Put the cooked waffles on a cooling rack to let the steam escape so they stay crisp and don't get soggy.
9. Serve with butter and warmed maple syrup. ENJOY!
10. Cook bacon in single layer on a baking sheet at 375 degrees for about 18 minutes or until crisp.
DINNER:
1. Put the ground beef in a medium size mixing bowl.
2. Grind slices of bread into crumbs.
3. Add salt, cloves, allspice and cloves.
4. Add milk, mix well. I use my hands to get it well mixed into a uniform mixture.
5. Form the mixture into meatballs. Roll them tight between both palms so that they won't fall apart while they cook.
6. Heat a large frying pan over medium high heat. Add oil. When oil is sizzling, drop the meatballs in one at time.
7. Cook until brown on one side, then roll each to another side and brown on that side. Do this until brown on all sides.
8. Add water and cider vinegar.
9. Add brown sugar, ginger and bay leaf.
10. Heat until boiling, then turn heat down to medium low and let simmer for 20-30 minutes, covered.
11. Dissolve cornstarch in cold water. Whisk the dissolved cornstarch into the sauce with the meatballs. Mix well. Turn heat to high and boil for a minute or until sauce is thickened.
12. Remove the bay leaf.
13. Serve over egg noodles. ENJOY!
DESSERT:
2. Mix on medium speed for 2 minutes. Pour into a greased 9x13 inch pan. Bake according to package directions.
3. Meanwhile dissolve the gelatin (any flavor, I used raspberry) in hot water.
4. Stir in cold water, mix well and set aside.
5. Let cake cool 20 minutes. Then poke the fork, vertically straight down into the cake, in rows down the full length of the cake in rows all the way across.
6. Pour the gelatin mixture over the whole cake to let it seep into the poke holes.
7. Refrigerate cake until cool (about an hour). Meanwhile, whip up the whipped cream (or thaw Cool Whip if using that - real whipped cream is better though.)
8. Spread the whipped cream over the cake. Keep refrigerated.
9. ENJOY!
