It's Tuesday morning of Week Six.
It's Tuesday morning. Today we are going to have eggs over easy with fried ham and berry granola smoothies for breakfast. My mom never made eggs like this - she really only scrambled or hard-boiled eggs. My dad would make omelets - but I hated his omelets. I used to hide them in my lap and then throw them away. So the first time I had eggs with a runny yolk was at my best friend Becky's house. I fell in love! I love a slightly runny yolk - well salted and peppered. We all do - and ham is one of our favorite things. So I can't wait to eat this breakfast.
For dinner we are having Caribbean-jerk chicken over rice. I love this tangy, slightly sweet and spicy chicken! It's so good with fluffy warm rice. It's often served with red beans mixed into the rice - but I'm doing plain rice with it today.
For dinner - these are super easy, really fun and very yummy cookies! Several years ago I got these two cookbooks of recipes that turn cake mix into different desserts. I have LOVED these cookbooks. But one of the funnest things is that you can turn any cake mix into is a cookie - and then add ingredients (like chocolate or other flavored baking chips, candy bars, cereal, nuts, etc.) to turn them into a unique cookie. Today I am doing just that - with Funfetti cake mix - and then I am going to simply roll it in sprinkles and bake them. You can use ANY KIND OF SPRINKLE. Today I am using rainbow sprinkles. But you can use confetti sprinkles, colored sugar sprinkles (I used my daughter's high school colors - gold and blue - for cookies I had to bake for a cheerleading event). The kids are going to be excited - they LOVE these!

BREAKFAST:
Eggs Over Easy and Fried Ham
1. Melt butter in a medium size frying pan. Break eggs into hot melted butter. Sprinkle with salt and pepper.
2. Once the egg whites turn from clear to white, carefully flip them over to cook on the other side.
3. Melt butter in a medium size frying pan. Place ham slices in hot butter, cook until slightly browned, crisp and golden on edges but still soft and tender on the inside.
BERRY BANANA GRANOLA SMOOTHIES
1. I am making 6 smoothies so I am tripling the recipe. Dump 6 cartons of strawberry yogurt into a large blender.
2. Add 1 1/2 cups of milk and 1 1/2 cups chopped strawberries.
3. Add 3 - 4 bananas. Blend well.
4. Pour into glasses and top with crushed granola bars. I found this big pouch of already crumbled granola that is just perfect for this. Add an umbrella for fun. ENJOY!
DINNER:
1. Turn crockpot on LOW, place chicken in it.
2. Pour, ginger, all spice and cinnamon on top.
3. Pour olive oil, salt and pepper on top.
4. Chop jalepenos and slice green onions. Place both on top.
5. Pour in red pepper flakes and garlic.
6. Add brown sugar and cider vinegar.
7. Pour orange juice (I used lemon juice because my kids got to the orange juice and drank it all before I could use it!) and Worcestershire sauce. Put lid on and cook for 6 hours or so.
8. Slice and serve with rice - drizzle sauce over top. ENJOY!
DESSERT:
1. Turn oven on to 375 degrees. Melt a cube of butter.
2. Pour Funfetti cake mix into bowl of stand mixer.
3. Add eggs and melted butter.
4. Mix until well blended. Dump sprinkles into a bowl. Form cookie dough into balls and roll in sprinkles.
5. Place sprinkle-covered cookie dough balls on greased baking sheets. Cook for 8-10 minutes. They will be puffy when you first take them out of the oven but will flatten slightly.
6. These are really fun and yummy! ENJOY!
