It's Saturday morning of Week Five.
Saturday is the only day of the week I don't cook something for breakfast. I grew up watching Saturday morning cartoons - and cereal goes so well with that!
On the menu for dinner is Sweet and Sour Beef over Rice. I love sweet and sour sauces - they just hit every right note for me. And I like that this one is for beef - sweet and sour sauces are most often used with chicken or pork - but I love beef especially slow cooked in sauces that will make it as tender as steak. I can't wait.
For dessert is Scotcheroos. I first had these when one of my best friends made them in high school. I still don't know why they are not as popular as rice krispie treats because they are almost as easy and even better! Chocolate, butterscotch and peanut butter paired together in a way that all the flavors are separate and distinguishable - serious perfection. Love these things!

DINNER:
1. Cut beef into one inch chunks. Heat a large frying pan over medium high heat and add a little olive oil.
2. Mix flour, salt and pepper in a medium sized mixing bowl. Drop beef chunks into the mixture.
3. Coat the beef with the flour mixture by stirring it up well until all the beef chunks are coated on every side.
4. Drop the flour coated beef chunks into the hot oil in the frying pan.
5. Cook well on each side to brown, by stirring every few minutes to turn each chunk to a different side until all sides are browned.
6. Chop the onion and carrots.
7. Add onion, ketchup and brown sugar to frying pan.
8. Add red wine vinegar, Worcestershire sauce and water. Stir to mix sauce and beef chunks.
9. Add carrots, mix in and put lid on. Cook over low heat for 30 minutes or until beef chunks are cooked through and tender.
10. Serve over rice. ENJOY!
DESSERT:
1. Add corn syrup, peanut butter and sugar to a medium size sauce pan over medium-low heat.
2. Cook and stir until melted and a uniform, creamy mixture.
3. Meanwhile, grease a 9x13 inch pan and pour butterscotch chips and chocolate chips into a medium-size microwavable bowl.
4. Once its melted, pour 6 cups of crisp rice cereal into the mixture and gently stir to coat.
5. Dump into the greased pan and spread into an even layer.
6. Heat the butterscotch and chocolate chips in the microwave for a couple of minutes on 50% power. They will mostly hold their shape even after they're melted, stir until smooth.
7. Spread the melted butterscotch and chocolate mixture over the crisp rice layer. Smooth over the top.
