Week 4 Tuesday Bacon Cheddar and Scallion Strata; Beef Fajitas and Toffee Chocolate Chip Cookies

It's Tuesday morning of Week Four.
 
 
 
Tuesdays are usually an egg dish for breakfast. The great thing about the dish on today's menu is that all you have to do in the morning is pop it in the oven and then enjoy a flavorful, textured dish. Bacon Cheddar and Scallion Strata BUT that's because all the preparing is done the night before..... so if you forget... well, just don't forget! Do the prep work the night before! It's WORTH it!! And you'll be  so glad in the morning that you did.
 
For dinner, I am making Beef Fajitas.... excuse me while I stop and drool. I LOVE fajitas - of any kind really - but steak fajitas are my all time favorite. The recipe calls for round steak, but I found some Tri-tip Petite Sirloins on sale - I got 3 pounds for $8 which is awesome. So I am soooo looking forward to eating these tonight. The blending of sourcream, salsa, cheese and steak makes me so happy!
 
Tuesdays are usually cookies for dessert and tonight, I am making Toffee Chocolate Chip Cookies -it's basically a chocolate chip cookie recipe but you use English Toffee Bits (Heath) instead of chocolate chips. I have a weakness for the golden buttery sweet goodness of toffee- so these are definitely a favorite of mine! 
 

Bacon Cheddar and Scallion Strata

 

Beef Fajitas and Toffee Chocolate Chip Cookies

 
Breakfast:
 
 
1. THE NIGHT BEFORE: Cut bacon into 1- 2 inch size pieces. Then cook bacon in a large heavy skillet over moderate heat, stirring occasionally, until crisp.
 
 
2. Transfer bacon to plate covered with paper towels to drain off fat.
 
3. Slice green onions - I always do this with scissors - and put in a small bowl.
 
4. Cut bread into small but good sized chunks.
 
5. Break the eggs into a medium sized bowl.
 
6. Add milk, Worcestershire sauce and salt and pepper. Mix well.
 

7. Grease a 9x13 inch pan. Set out the bread chunks, cooked bacon, sliced green onions, cheese, and egg mixture. Then spread 1/2 the bread chunks in the bottom of the pan.
 
8. Spread 1/2 the cheese, 1/2 the bacon and1/2 the green onions over the bread.
 
 9.  Spread the rest of the bread, then cheese, then bacon and remaining green onions in the pan.
10.  Pour egg mixture evenly over the top of all the layers.
 
 
11.  Cover with aluminum foil and put it in the fridge over night.  

 
12. IN THE MORNING: The next day, take the pan out of the fridge and remove aluminum foil. Heat the oven to 350 degrees. Bake for about 50 minutes. ENJOY!
 
 
 
Dinner:

 
 
 1. Slice steak into long strips.
 
2. Slice onions into strips.
 
3. Slice the bell peppers into strips.
 
4. Heat a large frying pan over medium high heat. Pour a little oil into the pan. Add onions and a little garlic.
 
5. Add peppers. Cook until softened.
 
6. Add steak, salt and pepper it, then cook covered until brown on the outside.
 
7. Add salsa and lime juice. Cook until steak is to desired doneness and the flavors have melded.

 
8. Serve in tortillas with cheese, and sour cream, sauce and guacamole, if desired. ENJOY!      
 
 

 
 
DESSERT:
 
 

1. First I put the egg in a bowl of warm water so it will come to room
temperature before I need to use it.

2. Put 3/4 cup of shortening in a mixing bowl with 1 1/4 cup brown sugar. Mix for a few minutes until it is light and fluffy. Don't skip that step - if you just mix it up enough to blend it, you won't get as good a cookie as if you let it beat enough to become fluffy.
 
3. Beat in the egg and vanilla.
4. Add the salt, baking soda and flour.
5. Mix well and add the English Toffee Bits ( I use Heath brand - they are so good!)
 
 6. I took the dough out of the fridge and formed them into balls just slightly smaller than Ping-Pong balls and put them on ungreased cookie sheets.
 7. I like cookies to be soft and not turn crunchy after they've cooled so I err on the side of under-done, taking them out of the oven just after they've barely started to golden in spots. So about 7-8 minutes at 375 degrees.
8. Remove from the pan after a minute or so because they continue to cook on the hot pan. ENJOY!
