It's Friday morning of Week Four.
Friday is the day I usually do a hot cereal with a sweet roll. So today's menu has spiced peach oatmeal with sweet orange rolls.
For dinner, it's a rich meaty Bolognese sauce over bowtie pasta with broccoli and white chocolate tarts topped with fresh raspberries. YUM!
BREAKFAST:
1. Make the number of servings of oatmeal you need, right from the back of the oats canister.
2. When it is cooked and thickened, stir in spiced peach jam. Spoon into individual dishes and top with fresh sliced peaches.
3. Serve with orange rolls - right from the fridge - fast easy, not spectacular but a good little treat before school or work after hot cereal.
DINNER:
1. Heat a large frying pan over medium high heat. Add a little oil, then the chopped onion and ground beef.
2. Break the ground beef up and cook and crumble until brown and cooked through.
3. Add the carrots, tomatoes and garlic.
4. Add basil, oregano, rosemary, anise seed and thyme.
5. Add Dijon mustard, white wine (or white grape juice) and sugar.
6. Cover and let cook on low for 10-20 minutes or so, until the flavors have melded and developed. Serve over bowtie pasta. ENJOY!
DESSERT:
1. Melt sweetened condensed milk and white chocolate chips in a saucepan over very low heat.
2. Once all the chocolate is melted, take it off the stove and add almond extract. Cool to room temperature.
3. Whip the cream in a stand mixer until soft peaks form.
4. Fold chocolate mixture into the whipped cream.
5. Spoon into crusts.
6. Refrigerate for at least 4 hours or until set. Top with sliced strawberries or fresh raspberries. ENJOY!
