It's Saturday morning of Week One.
Saturday is the only day of the week I don't cook something for breakfast. I grew up watching Saturday morning cartoons - and cereal goes so well with that! Today we poured cereal and watched some new cartoons and some old favorites that I found on YouTube.
Dinner tonight is a recipe that I got that is supposedly Frank Sinatra's favorite recipe. Whether that is true or not, I don't know. But it's one my family loves. It's a very simple recipe - Sausage and Peppers over Penne. The first time I tried it, it was a new idea to me. It was so much lighter than the cream, tomato or cheese based sauces that I had always had on pasta.
For dessert - sticking with the cereal Saturday theme - I am making Rice Krispie Treats with M&Ms. I remember the first time I had M&Ms in my Rice Krispie Treats - it was a revelation. Two great treats all in one dessert!
Sausage & Peppers w/ Penne and Rice Krispie Treats with M&Ms |
DINNER:
1. Chop the onion into thin strips or wedges. Then chop the peppers into similar sized strips.
2. Slice the Italian sausages into slices. Any kind of sausages work - spicy hot ones work well or mild or red wine or herb-flavored.
3. Pour the olive oil into the crockpot (My crockpot broke so I am using a large pot today instead). Then add the onion and garlic.
4. Put the peppers and sausage on top.
5. Add the red wine (or grape juice like I used) and thyme (I used fresh thyme from my garden).
6. Put the lid on and cook on LOW for 4-6 hours or longer (if needed).
7. Serve over rigatoni or penne. ENJOY!
DESSERT:
1. Put half a cube of margarine or butter and one 10 oz package of marshmallows in a large microwave-able bowl. Put in the microwave for about one minute.
2. The marshmallows should be puffy, quickly stir the marshmallows and melted butter together until they are a melty, smooth mixture.
3. Pour 6 cups of Rice Krispies cereal one at time into the marshmallow mixture. Keep stirring while pouring to mix it all together while the marshmallow mixture is still warm and pliable.
4. Pour the M&Ms into the mixture. I used an entire 40 oz bag - which was probably a bit much - but I like the contrast of crunchy M&Ms and the marshmallow-y Rice Krispies.
5. Stir well and pour into a greased 9x13 inch pan and press down into an even layer.
